Award-winning Chef de Cuisine, Dominique Rubaud,
and hotelier, Herman Bal, have combined their talents
to create Restaurant Oscar, a prestigious Italian
Ristorante located in the heart of Paris in the Hotel
Lumen Paris Louvre. Serving all the fine and
generous flavors of Italian cuisine, dishes include
Sea Bass Carpaccio with Capers from Sicily, Spring
Roll of Fried Mozzarella and Parma Ham, Risotto ai
Frutti di Mare, Vongole, Cozze, Calamari, Gamberoni
and Codfish Grilled with Sweet Garlic Cream and
Vanilla Butter. Desserts include Matcha Tea Tiramisu
and Pistachio and Orange Blossom Panna Cotta with
Honey Mango Jelly and Lemongrass.
Dominique, who was born in Carentoir, a small village
in French Brittany, gained his experience in large
institutions in France and Switzerland. After working
as Chef de Cuisine for the French Embassy in Finland,
he opened his own restaurant, Chez Dominique, in
Helsinki. Awarded two Michelin stars, the restaurant
is listed as one of the 50 Best Restaurants in the
World.
With a passion for Italy, Chef Rubaud developed his
own concept of *Fusion Cuisine* which is based on
traditional Italian cuisine. His return to Paris and a
meeting with hotelier, Herman Bal, has allowed the
two food lovers to realize this ambitious project,
Restaurant Oscar, located in the Hotel Lumen Paris
Louvre.
